Salmon tartar with cucumber and coriander

Ingredients for 4 servings:

For the Tartar:

400 g fresh Salmon chopped
2 tablespoons of soy sauce
2 tablespoons of lemon juice
8 tablespoons of olive oil
1 bunch of fresh chives, chopped
lemon zest of one lemon
salt & pepper

For the small cucumber salad:

1 cucumber cut into thin sticks
½ bundle chopped coriander
1 tablespoon of lemon juice
4 tablespoons of olive oil
salt & pepper

For the decoration:

1 green apple cut into thin sticks



Make the cucumber salad with all ingredients mixed in a bowl.

Mix all the ingredients for the tartar in a tray. Check the seasoning.

Put the salad in a deep dish and on top the salmon tartar. Decorate with the apple sticks and sprinkle fresh raw olive oil above.
